While most guests are still asleep, the kitchen team is already hard at work preparing for one of the busiest services of the day.

“Breakfast is one of the busiest and quickest services we have,” explains Executive Chef Jun Tubog. “Many of our guests are divers who need to leave early for their scheduled dives, so everything must be organized and ready before service begins.”

From peeling and slicing fresh fruits to preparing crispy hash browns and stocking every station, the team carefully completes its mise en place to ensure a smooth and efficient breakfast service. Every detail is prepared in advance, allowing dishes to be served quickly while maintaining consistency and quality.

SUPPORTING LOCAL FARMERS AND PRODUCERS

Many of the ingredients served each morning come directly from nearby farmers, fishermen, and local producers. Fresh fruits and vegetables are sourced locally whenever possible, while locally raised chicken and pork help support regional agriculture.

“We source a significant portion of our fruits, vegetables, seafood, and meats from nearby farmers and fishermen,” says Chef Jun. “It allows us to get fresher ingredients while supporting the livelihoods of the communities around us.”

By reducing transportation time, ingredients arrive in the kitchen at their peak freshness while also lowering the environmental impact associated with long-distance food transport.

While local ingredients play an important role, many breakfast favorites are prepared entirely in-house.

Every morning, Atmosphere’s bakers prepare fresh bread for breakfast service. The kitchen also produces its own beef tapa, a Filipino breakfast favorite known for its savory, slightly sweet, and mildly tangy flavor profile.

Another local highlight is the resort’s sweet-style chorizo, which reflects the distinct flavors of the region.

Vegetarian guests can enjoy locally produced tofu, creating wholesome breakfast options that showcase local ingredients in a different way.
