What to expect from your wine tasting in the Philippines

At Atmosphere, wine tastings are a truly unique experience. Step out of the tropical heat and into our climate-controlled glass walled wine tasting room with a magnificent view of the sea. Together with our WSET level 2 wine connoisseur Ed, you will explore the subtle differences between carefully selected wines and grapes. Ed will make the tasting both fun and informative. 

Whether you take a fancy to our house wine or our finest Bordeaux, we will find something that suits you. It is the perfect opportunity to select a red wine for dinner in Ocean or Breeze, or a white wine for us to keep chilled for you in the bar for after-dive drinks.

3 different wine tastings and wine flights

We have three different tastings. A Regular, a Premium and a Sommelier tasting. Our tastings last between 1-3 hours and we recommend doing the wine tasting in the afternoon between before dinner. All tastings come with bread (read below about why we add bread!) and the Sommelier wine tasting also includes cheese and cold cuts.

We also offer the “wine flights”, a fantastic opportunity to sample a selection of 5 or 6 reds and whites in small quantities – readying your appetite for dinner.

Why do we serve bread and cheese during our wine tastings?

During our wine tastings in Atmosphere, we serve a bread basket, and for the Sommelier tasting, we also add cheese and cold cuts. Why? 

Because both bread and cheese act as palate cleansers. They neutralise the taste buds between the different wines and it allows you to fully appreciate each wine’s unique flavours and characteristics. We also have a little bowl with coffee beans for you to smell to reset your olfactory system. (Do you know what the olfactory system is? It is the sensory system used for smelling; The sense of smell, in short, and it is at the roof of the nasal cavity.)

The bread and cheese also provide a contrast in flavours and textures and can enhance the tasting experience. It brings out the wine nuances and makes the overall enjoyment even better by providing a delightful accompaniment to the wines.

Wine tasting is a sensory experience, incorporating sight, smell, and taste. For that reason, it’s a general rule of wine tasting etiquette that you as a participant should dry to avoid wearing heavy perfumes, heavy make-up colognes, or strongly scented body lotion when doing a wine tasting.

It is also advised to avoid eating strongly flavoured foods before your wine tasting. Foods with strong flavours, such as garlic, onions, or spicy dishes, can affect your palate and alter the taste of the wine. We highly recommend sticking to neutral foods and drinking water before the tasting.

Lastly, do not eat the coffee beans! They are only there for you to smell to reset your olfactory system and not for eating (yes, you’ll be surprised, we had many guests who thought they were snacks).

An eco-friendly wine collection at Atmosphere

At the resort, we take pride in our curated selection of fine wines from renowned vineyards worldwide. Our collection features diverse varieties, from robust reds to crisp whites, ensuring there’s something to delight every palate.

Our wine cellar holds a collection of approximately 100 wines from around the globe, carefully sourced from both renowned and emerging wineries to make your wine tasting in the Philippines extra special. 

We store our wines in our wine cellar and our wine tasting room respectively, at a consistent cool temperature. Champagne and screw cap wines stand upright, while all cork wines are stored vertically. Take a look at our wine menu to see our whole wine collection!

Like everything else in Atmosphere, our wine policy follows our environmental policy. When choosing our wines, we prioritise sustainable farming and wines crafted with zero fertiliser and zero pesticides from our local suppliers in Manila.
