We sat down with Executive Chef Jun Tubog, the culinary mind behind Atmosphere’s signature dishes, to explore what makes Filipino food special — and how it comes to life with an Atmosphere twist.

A Culinary Heritage Shaped by History

We’ve been colonized by several countries for a long time, and I believe this part of our history has made our cuisine more diverse,” Chef Jun shares.

Filipino cuisine is a beautiful blend of flavors shaped by time and tradition — Spanish, Chinese, Malay, and American influences, all woven into dishes that are deeply Filipino. It’s this diversity that makes every bite familiar yet distinct, humble yet flavorful.

When asked about his personal favorite, Chef Jun doesn’t hesitate. “I personally love lumpia, whether vegetable or pork. It’s a simple dish, yet almost everyone who tries it — both locals and foreigners — immediately falls in love with it.”

Lumpia are Filipino-style spring rolls, typically filled with meat or vegetables and fried until crisp.

Sinigang na hipon — a comforting Filipino classic where tangy tamarind broth meets the sweetness of fresh prawns.

He also believes that adobo, sinigang, and lumpia best represent the Filipino table. “Adobo and sinigang showcase the dominant flavor profiles in our cooking — salty, sweet, and sour — often achieved with soy sauce, muscovado sugar, vinegar, and tamarind. Lumpia, on the other hand, reflects our love for deep-fried food, especially when cooked until perfectly crisp.”

Adobo is a beloved Filipino stew made with meat braised in soy sauce, vinegar, and spices, while sinigang is a tangy soup often flavored with tamarind and local vegetables.

The experience highlights how food brings people together, tells stories, and creates connections — right at the heart of the resort. 

Passion, Pride, and a Touch of Umami

For Chef Jun and his team, inspiration comes from both praise and challenges. “Positive feedback and guest compliments fuel our desire to do better and create more. Negative feedback may hurt our pride at first, but it challenges us to adapt, improve, and show that we can always rise to the occasion.

Looking ahead, Chef Jun hopes to spotlight more local ingredients, like the seasonal mushrooms called ohong, which grow only during thunderstorms. “They’re prized for their rich flavor and natural umami,” he explains — a fitting example of how nature and flavor beautifully come together in Filipino cuisine.

So, which Filipino dish would he take global? Without missing a beat, Chef Jun answers with a smile — “Lumpia.
